Chef Tomek Czajkowski keeps the cooking simple enough to let beautiful Polish ingredients shine. The leniwe with roasted plums, labneh and brown butter are the sort of dish you’ll find yourself recommending to strangers, while the cauliflower baked with béchamel and aged Bursztyn cheese proves vegetables deserve top billing. Finish with the delicate karpatka, order another coffee or glass of wine, and congratulate yourself on making excellent life choices.

Well, we give Wilcza 43 the Polish category, but the restaurant is really about Polish ingredients rather than Polish cuisine. Chef Wit Szychowski has quietly become one of Warsaw’s most dependable talents, and his unmistakable shower of finely chopped chives has become a calling card, the final flourish that tells you exactly whose kitchen you’re eating from.
Seasonality drives every plate, but the cooking never feels fussy. Instead, exceptional produce is allowed to speak for itself through thoughtful technique and restrained confidence. Our standout was the unforgettable baba z kiszonej kapusty ze śmietaną i szczypiorkiem. Rich, tangy and comforting, it transforms humble fermented cabbage into something genuinely memorable, lifted by cool sour cream and, naturally, that signature scattering of chives.
The wine deserves equal attention. Rather than relying on familiar labels, the list celebrates small producers and distinctive bottles, with an excellent selection of Polish wines alongside natural and low-intervention European producers that reward curiosity as much as the food does.
The intimate dining room feels like the kind of neighborhood bistro every city wishes it had: relaxed, knowledgeable and refreshingly free of ego. Wilcza 43 isn’t interested in reinventing Polish food. It simply reminds you how extraordinary Poland’s ingredients can be when they land in the hands of a chef who knows exactly when to stop.

Some restaurants ask you to dress up. Others simply make you wish you’d ordered another round of pierogi. U Wieniawy has that effect. Step through the front door, past the sword mounted on the entrance, and suddenly Warsaw’s frantic pace gives way to old-school hospitality. Named after the legendary cavalry officer Bolesław Wieniawa-Długoszowski, the restaurant wears its history lightly, never feeling like a museum. The steak tartare is beautifully prepared, the mixed plate of handmade pierogi is one of the city’s essential orders, and the gołąbki remind you why Polish comfort food has survived every passing trend. The waiters know the menu inside out, the vodka list is formidable, and hidden upstairs is a remarkable collection of Piłsudski-era posters. Come hungry, leave slightly more Polish than when you arrived.
