On Hoża, where concepts come and go with the seasons, MIMO by BBQ Bar feels refreshingly self-assured. The latest project from Marta Stoczewska and Michał Makowski trades polish for personality, transforming a former hair salon into something closer to a street-side pit stop than a polished bistro. Think bright colors, tight quarters, and walls that echo the ribbed steel of a shipping container. A slogan splashed across the space—“Stay Horny for Meat”—sets the tone: playful, a little irreverent, and entirely focused on what matters.
Despite nods to Mexico on the menu, this is not a place for those chasing the finesse of taquerias like Señor Lucas. The tacos here are something else entirely—vehicles rather than the main event. What lands on your tray is Texas barbecue at its core: deeply smoked, expertly handled meat that speaks of patience and fire. Brisket arrives with a peppery bark and melting interior; pulled pork is rich without tipping into heaviness. Tortillas (and occasional slices of white bread) feel almost incidental, as if a pitmaster reached for whatever was nearby to carry the real prize.
The menu is short, which works in its favor, keeping the focus tight and execution sharp. There are vegetarian options, though this is undeniably a carnivore’s playground.
MIMO doesn’t try to be everything. Instead, it leans into its strengths—smoke, meat, and mood—and in doing so, quietly becomes one of the more distinctive casual bites in central Warsaw.
