Celebrity chef Karol Okrasa is the inspiration and figurehead behind the menu, but it’s his foot soldiers that deserve real credit. When Okrasa isn’t present, they’re the ones who keep the place ticking over, turning out fine dining moments that go way beyond memorable. Although the hotel environment naturally attracts an international corporate clientele, the overall quality merits attention beyond the sphere of the restaurant’s natural audience. Of note are beautifully composed dishes such as deer served with plum jus and smoked potato.
