Chef Thomas Coupeau brings his Franco-Asian neo-bistro cooking to Wilcza.
Chef Thomas Coupeau brings his Franco-Asian neo-bistro cooking to Wilcza.
For two nights only, MUSA Bar hands over its kitchen to Pluto Paris, the Paris-based concept led by Thomas Coupeau.
Part of MUSA’s ongoing Special Guest series, the residency continues the venue’s focus on inviting some of Europe’s more interesting neo-bistro voices to Warsaw.
Coupeau’s cooking draws from a personal and professional duality. Raised in La Rochelle in a family-run Vietnamese restaurant, he developed an early understanding of balance, aromatics, and depth of flavour. That foundation was later sharpened in Paris, where his work—particularly at Carbón—became associated with bold, fire-led cooking and a distinct, contemporary гастрономic identity.
Pluto, now based within Lafayette Anticipations, extends that philosophy into a fluid, modern format—part restaurant, part creative project, built through collaborations and residencies across cities.
At MUSA, guests can expect a tightly composed menu that blends French structure with Asian inflection—dishes that lean into intensity without losing precision. The experience is rounded out by MUSA’s considered wine selection and its typically polished, low-key service.
This is less a guest appearance and more a full kitchen takeover—brief, focused, and very much in the moment.
